Sweet and Savory Quiche (Paleo option)

Growing up, my older sister Marina always loved my grandmother's quiche. As a picky eater, of course I never partook! However, as I aged and my taste buds matured I began enjoying this dish. Feel free to keep the dish pure Paleo by leaving out the cheese, or add in cheese as tolerated by your body. It tastes great either way!
Ingredients:
8 eggs
spinach about 1 cup
sweet and savory chicken sausage (such as Applegate's chicken and apple or Bratt's maple breakfast chicken sausage links)
1 cup cheese (totally optional)
1 paleo pie crust (see below)
Ingredients for crust:
1 and 1/2 cups of almond flour
2 TBS coconut flour
1/4 tsp salt
1 TBS palm shortening or grass fed butter
1 egg
Let's get cooking:
For crust:
In a food processor, combine the flours and salt until evenly mixed. Add in palm shortening or butter and egg and mix until the dough balls up. Roll in a ball and refrigerate in a tightly sealed plastic bag for 30 min. Roll out the dough and place it in a pie pan.
In a Nutri-bullet or in a bowl with a whisk, mix all the eggs and pour into a bowl. Add the sausage (cut into pieces), spinach and cheese (optional). Mix.
Pour the mixture into the pan with the pie crust already in it. Cook on 350 for 25 min. After that, put a fork in the middle and check it every 5-7 min. until the eggs are fully cooked through.
