One Pot Italian "Pasta"

As a kid, I loved Italian pasta (especially plain ole buttered noodles)! This is a simple dish I found myself putting together in my head while at Trader Joe's last weekend, and the best part is, it only requires one dish!


Ingredients:

3 TBS olive oil

1 cup chopped yellow onion

1 TBS minced garlic

1 pound ground meat or pre-cooked sausage links (if desired - I recommend the links!)

1 1/2 cup drained petite diced tomatoes

3 TBS tomato paste

2 TBS fresh chopped basil

1 1/2 tsp oregano

6 zuchinni spiralized into noodles (about 6 cups if you buy it pre spiralized)

1 pack of pepperoni or salami


Let's Get Cooking:

In a large pot, place olive oil, diced onion, minced garlic and ground meat (if desired) and cook until until browned (It won't take long). Reduce to medium heat and add in all tomato paste, diced tomatos, oregano and basil and stir the mixture until fully mixed. Add in zuchillini. Reduce to low and cook until noodles reach your desired softness (we like them a little crunchy). Lastly, add in chopped peperoni or salami and chopped pre-cooked italian sausages (if desired).
