Slow Cooke Terriyaki Chicken

I love a good slow cooker recipe! I can throw it on in the morning and have a delicious meal waiting for me after a busy day away from home. And, it doesn't hurt that this chicken is the perfect balance of of savory and sweet and is just so tender!


Ingredients:

1/2 cup coconut aminoes

1/2 cup pinneapple juice

1 TBS olive oil

1 TBS honey (you can double this if you want it very sweet)

2-3 TBS tomato paste

1 tsp minced garlic or 1 tsp garlic powder

1 lb chicken cutlets or breasts (cutlets best)

1/4 tsp red pepper flakes (optional)

1 cup chopped fresh pineapple (optional)


Let's Get Cooking:

Remove all visible fat from the chicken and place it into the bottom of the crockpot. In a bowl, combine coconut aminos, pineapple juice, oil, honey, tomato paste, garlic and red pepper flakes and whisk until fully mixed. Add in chopped pineapple. Pour the mixture over the chicken cutlets and cook on low in the crockpot for 3 hours. You can either shred the chicken with a fork and knife at the 2 hour mark, or after it is finished cooking. Either works!
