Slightly Spicy Marinara Sauce

I prefer a savory spaghetti sauce to a sweet one any day. Here is my current rendition!


Ingredients:

8 medium sized tomatoes

2 cups sliced mushrooms

3 TBS olive oil

fresh basil (1/4 cup)

2 TBS oregano

1/2 TSP red pepper flakes (less if you don't want it very spicy)

3-4 TBS tomato paste

1 diced yellow onion

1-2 TBS minced garlic

desired salt


Let's Get Cooking:

Slice tomatoes in half and roast on 350 about 1 hour. Let tomatoes cool, and then place them in a food processor and pulse about 3 times. You could also blend in mixer about 5 seconds, more if too chunky. In sauce pan, add 2 TBS olive oil and diced onion and minced garlic and brown on high (about 2 min.). Add in all other ingredients to the sauce pan and mix well. Cook on high 3-5 min, stirring with a spatula to prevent burning. Then reduce to low and cook for about 15 min with a lid on top.
