Soft and Chewy Chocolate Chip Cookies (Paleo)

These cookies are SO EASY and SOOOOOO GOOD! And, they are also gluten, dairy and refined sugar free! What's not to like?! Enjoy them plan or as whoopie cookies stuffed with my swiss meringue vanilla buttercream!
Ingredients:
1/4 cup + 1 TBS palm shortening or grass fed butter
1 egg
1 tsp vanilla
1/3 cup coconut sugar
1 1/2 cups almond flour
1 TBS arrowroot flour
1 TBS coconut flour
1 TBS ground flaxseed meal
1/2 tsp baking soda
1 tsp apple cider vinegar
1/2 cup dark chocolate chips (I use 72% or higher)
Let's Get Cooking:
In a bowl or food processor, combine all wet ingredients except apple cider vinegar. In a separate bowl, mix all dry ingredients. Add the dry ingredients into the wet ingredients. Add in the apple cider vinegar. Ensure that everything is evenly mixed. Add in chocolate chips.
Form into 12 cookie dough balls and place on a cookie sheet. Lightly flatten the dough balls so they are about 1/2 an inch thick. Bake on 350 for 12-14 min.
