Fluffy Cashew Chocolate Chip Everything Cookies

The other day, we were moving out of our new appartment and I had some ingredients in the pantry I needed to get rid of. So....I whipped them otgether into these DELICIOUS low sugar cashew chocolate chip "everything" cookies ("everything" because you could add nuts, fruit anything to them and it was be fantastic)!


Ingredients:

1 cup of raw cashews

1 TBS honey + 2-3 TBS of coconut sugar

2 TBS of palm shortening or butter

1 egg

1 TBS almond flour

3 TBS arrowroot flour

1/2 tsp baking soda

1 tsp apple cider vinegar

dark chocolate chips, dried fruit, and/or nuts


Let's Get Cooking:

In a food processor, blend raw cashews into the resemblance of a course flour. Add in honey, coconut sugar, palm shortening/butter, and the egg and mix on high to make a batter. Pour the batter into a bowl and add in almond flour, arrowroot flour, baking soda, and apple cider vinegar. Once the dough is fully mixed, add in chocolate, nuts or dried fruit. Make 10 small-medium balls of dough and bake on 350 for 12-15 minutes.
