Paleo & Vegan Butternut Squash Squiggles (Sweet and Savory)

These "squiggles" are perfectly sweet and savory, and are in a shape that kids will love! These are perfect alongside a rich meat, or as a stand alone snack.


Ingredients:

2 1/2 cups cubbed or "squiggled" butternut squash (can be bought pre-cut at grocery stores)

2 TBS coconut sugar

1/4 tsp salt

1/2 tsp chili powder

1 tsp cinnamon

2 TBS melted coconut oil


Let's Get Cooking:

In a large bowl, place butternut squash and pour melted coconut oil over it. Stir until the oil evenly coats the squash. In a small bowl, combine coconut sugar, salt, chili powder, and cinnamon and mix until it has an even consistency. Sprinkle the seasoning onto the squash, and mix until every piece is nicely coated. Cook on 350 for 20 min, and add more time as desired from there (squash should not be hard to easily slice through with the edge of the fork when it is done). Use a baking sheet.


*Note: I always cover my baking sheets with parchment paper before cooking things like this for an easier clean up afterwards.
