Paleo Devil's Food Cake with a Dark Chocolate Drizzle

Take your next dinner party the another level with this pleasing dessert!


Ingredients:

4 room temperature eggs

4 TBS coconut oil

2 tsp vanilla

1/2 cup honey

1/2 cup coconut flour

1 cup of cocoa + 2 TBS

1 tsp baking soda

pinch of salt if desired

80% dark chocolate chips

1-2 tsp coconut oil (for drizzle)


Let's Get Cooking!

With a mixer, combine eggs, coconut oil, honey and vanilla. Add coconut flour, cocoa, baking soda and desired salt and mix until all lumps are removed. Let the mixture sit for 15 min. so that the coconut oil can fully absorb. Grease a piece of parchment paper with coconut oil lightly and place in a square baking dish. Pour in the batter and add in some of the chocolate chips to the top of the batter. Cook it on 350 for about 20 min., but more if the cake is still doughy in the middle afterwards. Remove and let the cake cool.


I also added 1/2 of the recipe for the paleo vanilla buttercream frosting that I posted before adding the chocolate drizzle.


In microwaveable dish, melt the rest of the chocolate chips. Mix in 1-2 tsp. coconut oil and then drizzle it on top of the cake with a fork.
