Paleo Coconut Flour Tortillas

Mexican style cuisine has always been something I really enjoyed. From the fresh tastes to the variety of choices, what's not to like? However, on a paleo diet (free of beans, cheese, and even corn for some people) I missed the taste of a warm and soft tortilla. But not to fear! Here is a recipes I have created to share!

Ingredients:

6 eggs

6 TBS coconut flour

2-3 tsp. coconut oil (melted)

If your batter is way too thick and won't spread well you could also add coconut milk (from the carton, not canned) or almond or cashew milk

coconut oil or olive oil spray for coating pan


Let's get cooking:


Whisk the eggs (I like to get it done quickly and mix them in the Nutribullet). Pour them in a bowl and mix in the coconut oil (melted) and coconut flour until all lumps are as removed as you can get them. The batter is pretty thin. Place a skillet on medium heat and grease. If it is a non-stick pan, only grease the skillet the very first time and not again after that. Otherwise your tortillas won't brown properly. Pour 1/4 a cup of batter on the pan and roll it around til it is about 6x6 inches or simply as large as you can make it. Cook it on each side a few seconds

(30 or so) . It only takes a few seconds per side. Brown to your own likeness. Fill with your favorite meats, beans etc or make a sweet crepe by filling the tortilla with your favorite fruit, nut butter or whipped cream.
