Simple Vanilla Ice Cream (Paleo)

Are you a Bluebell Lover? Well, my husband certainly is and so this recipe is for him! I created this from a recipe I remembered making as a child. It called for white sugar, heavy cream, vanilla and egg yolks. I took the same base recipe, but traded the heavy cream for canned coconut milk and the white, refined sugar for fresh light colored honey! Enjoy!


Ingredients:

2 cans full fat coconut milk (13.5 oz each)

1/2 cup honey

1-2 tsp vanilla

4 egg yolks

any desired toppings or add ins


Let's Get Cooking:

In a saucepan, combine all the ingredients and mix on medium heat until everything is fully mixed and the sauce is thickened (it should not easily drip from your whisk - think the same texture of gravy). Place in you ice cream maker and let it churn until it is fully mixed.
