Mashed Cauliflower with Sautéed Onions (paleo / vegan)

I loveeeeee mashed potatoes, but wanted something that was on the lower end of the carb side available to me as well. This dish is the perfect mashed potato substitute!
Ingredients:
6 cups cauliflower (I use pre-washed riced cauliflower to save me time)
2 cups chicken broth
2-3 TBS parsley
salt as desired
1/2 yellow onion diced
1 TBS minced garlic
1 TBS oil (olive or coconut)
Let's Get Cooking:
In a large saucepan, place the cauliflower and the broth. Cook on high for a few minutes, and then reduce to low and cover with a lid, cooking about 10 min. When you reduce to low, make sure there is still a little broth in the bottom of the pan to keep it from burning. Set aside and let cool. Then, in a food processor or blender, mix together the cauliflower until lumps are removed and it resembles mashed potatoes. If it is too dry, add in almond milk in small amounts until it reaches your desired creaminess. Pour in a separate bowl and stir in parsley and desired amount of salt. In a small saucepan (on high), place 1 TBS oil and let it coated the pan. Then add in diced onion and minced garlic and cook on high until it is nicely browned (about 2 min). You will need to stir this continuously with a spatula to keep it from burning. Remove and place it on top of the cauliflower in your baking dish.
**If you aren't concerned about dairy, this dish is great with cheese on top too!
