Carrot Soup (paleo / vegan)

In middle school, my mama started making this soup for me and I could never wait until the next time we got to eat it. You see, I have always been a carrot lover (one time I ate some many my hands turned a little orange). This soup is packed with nutrient goodness and a mix of flavors.


Ingredients:

3 cups cooked carrots sliced or mini

2 tsp oregano or basil

1 -2 tsp parsley

2 cups chicken broth +2 cups for boiling the carrots


Let's Get Cooking:

In a saucepan, place the carrots with 2 cups both and 1 cup water and boil until they are soft enough to be easily sliced through with the edge of a fork. Drain the carrots and place in a food processor or blender. Add the remaining 2 cups broth, parsley and oregano or basil to the food processor / blender and mix until it is creamy and resembles a thick soup.
